Where the Inspiration Came From for Scallops with Bacon, Mushrooms and Chives

No joke, sea scallops are one of my favorite things ever.

They’re so tender, plump and juicy; they taste buttery and practically melt in your mouth after you take a bite of one. 

Everyone knows scallops pair well with bacon but did you know that they also pair well with mushrooms? I didn’t know they paired well with mushrooms until recently; I found out this useful information while reading about what scallops pair well with in the Flavor Bible. You guys, BUY THE FLAVOR BIBLE! It’s full of information that will help you create delicious meals – look up an ingredient such as a meat, vegetable or herb and the book will list what other foods, spices and herbs pair well with it. 

This Scallops with Bacon recipe was super simple to make because it only uses 5 ingredients and one cooking skillet. It serves two but you can double or triple or do whatever you need to do to feed the people you need to feed. If you can’t find sea scallops in your area, I recommend ordering from Vital Choice  because they offer sustainably caught wild seafood.

Yield: 2 servings

Tender Sea Scallops are sautéed and paired with bacon, shiitake mushrooms, chives, garlic and butter. An incredibly elegant, easy to make dinner recipe with only 5 ingredients!

Ingredients

  • 8 oz sea scallops
  • 2 slices of sugar free, uncured bacon, chopped
  • 4 oz shiitake mushrooms, sliced
  • 2 tbsp of butter or extra virgin olive oil to keep it dairy free
  • Kosher Salt and Pepper
  • Chives for garnish

Instructions

  1. Add the chopped bacon to a skillet and heat to medium high heat. Cook for about 5 minutes, stirring often. You want to get the bacon browned on all sides.
  2. Add the mushrooms and 1 tbsp of butter or olive oil to the skillet. Season with kosher salt and pepper. Cook for about 5 minutes or until the mushrooms are tender.
  3. Remove the mushroom/bacon mixture from the skillet. Add 1tbsp of butter or olive oil to the skillet and then add the scallops. Cook the scallops 3 -4 minutes per side or until opaque.
  4. Divide the mushroom/bacon mixture between two plates. Top each plate with 4 sea scallops. Sprinkle with chives.
