Breakfast Skillet – Low Carb/Wheat Free

Sometimes I enjoy jumping on the low carb bandwagon. It’s an easy way to lose a few pounds and I actually feel better when I eat low carb. You see, I have issues with lower abdominal pain. It always seems to happen after I eat food. When I did low carb and cut out a lot of wheat products last Summer, those abdominal issues seemed to disappear. Of course, I started eating breads, cookies and other carb filled foods again when the holidays began to approach. And at about that same time, I started having issues with my lower abdominal region again (and I gained a few pounds.) It’s a pretty painful thing to go through. I’ve never gone to a Gastro doctor before because every other doctor says the issues are due to IBS. Well, I finally decided to make an appointment with a Gastro doctor due to a couple of intense flare ups. I went to the appointment and now I will be checked out to see if I have Chrons Disease or Ulcerative Colitis, which means that I will be having a colonoscopy done in a few weeks. This is something that usually isn’t performed for the first time until one reaches the age of 50 but alas, at the wee age of 31, I will have my first colonoscopy. No worries here, though. I’m looking forward to perhaps getting some answers regarding my abdominal issues.

Anyways, the reasoning for that story (which goes really well in a recipe post, eh?) is to bring up the importance of food and its affect on our bodies. Who knows, maybe eating tons of wheat products is having some sort of affect on me. So I like to incorporate tasty, low carb, wheat free meals into my diet. A couple of weeks ago I put together a delicious breakfast skillet that used up some leftover steak and grilled onions and peppers. It was a great way to use up leftovers and enjoy a low carb meal. I hope you enjoy this recipe!

Ingredients
Serves 1

  • 1 oz of grilled steak, cut into pieces
  • 1/3 C grilled onions & peppers
  • 3 eggs, beaten
  • 2 tbsp fresh salsa
  • 1 tbsp cheddar cheese, shredded
  • 1 tbsp sour cream

Directions

  1. In a small skillet pan, saute the steak, peppers and onions until they are heated.
  2. In another small skillet pan, scramble the eggs on medium heat until cooked to desired consistency is reached.
  3. Place the eggs on a plate and then top with the steak, grilled onions and peppers, shredded cheese, sour cream and salsa.

  3. That looks delicious! We have been doing low carb since Jan 15th. Breakfast has been getting a little boring and yesterday when we were in the grocery store I said to my husband that we should start having steak for breakfast, but we bought sausages and bacon instead. Next time I will get some steak. Good luck with sorting out your medical issues. Hope all goes well.

  4. Hope everything goes well with your tests and check ups. I know quite a few friends had the same issues as you do and they finally went gluten free and they’re now super happy with their body. I think I love bread and cookies so much it’s hard for me to go G-F. Anyway, good luck to you.
