Happy Tuesday! Are Tuesdays ever happy? Of course they are. It all depends on how you decide to tackle the day. Plus, waking up to over 40 meatless breakfast recipes to choose from for breakfast will make a Tuesday a fantastic Tuesday, am I right?

Breakfast is my favorite meal of the day. I love pancakes, eggs, oatmeal and french toast. I’m also quite content with a bowl of yogurt with fruit and homemade granola. One thing you won’t find on my breakfast plate anymore is meat, which is why I decided to put this meatless breakfast recipes posts together. I strongly believe that meat doesn’t have to be the focus of a meal and I also believe that it doesn’t even need to be a part of the meal. My meat eating boyfriend enjoys the meatless breakfast recipes that I make and I think he will enjoy some of the recipes in this collection, too (especially the pancakes!)
