Good morning! It’s that time again…time to reveal your recipe for the Spiked! Recipe Challenge! Before I get to my recipe, Carrie and I would like to thank you for participating in this challenge! We are excited to see what awesome and delicious tequila recipes you have come up with for our third ever Spiked! Recipe Challenge!

Now, on to my recipe (and then, of course, YOUR recipes!)

I decided to make a tequila lime marinade. I was going to marinate chicken but being the seafood lover that I am, I ended up using shrimp instead. Shrimp was a fantastic choice. And I’m not just saying that because I’m a seafood lover. The shrimp soaked up the marinade much better than chicken would have. And it came out so tender and perfect.

We grilled the shrimp (I say we but Ken actually did the grilling) and then tucked them in soft taco shells with shredded cheese and topped them with Sweet & Spicy Pineapple Slaw. We served these delicious tacos with tortilla chips, salsa and guacamole.

So I guess you want to see the recipe, right? Ok, ok, but first, let me tell you another little story. I’ll keep it short and sweet.

I started shooting in manual mode. Shooting with my DSLR camera, that is. I actually shot these photos in manual mode. But I did a shoot in creative auto as well. I have a comparison to show you.

Recipe: Tequila Lime Shrimp Tacos // Spiked! Recipe Challenge

Ingredients
  • 1 lb medium shrimp, peeled and deveined
  • 2 tbsp tequila
  • juice from one large lime
  • 2 cloves of garlic, minced
  • dash of lime zest
  • ⅕ tsp ground chipotle pepper
  • 1 tbsp fresh chopped cilantro
  • ¼ C olive oil
  • Dash of salt and ground black pepper
  • Pineapple slaw
  • Shredded cheese
Instructions
  1. In a mixing bowl, whisk together tequila, olive oil, cilantro, lime juice, lime zest, salt, pepper, ground chipotle pepper, and garlic.
  2. Add the shrimp and toss to coat. Cover and refrigerate for one hour.
  3. Grill in a grill wok over medium heat until the shrimp is opaque.
  4. Place shrimp in soft taco shells and top with shredded cheese and pineapple slaw.

    Oh yum! These look so delicious and fresh, Julie! I need to play around with some of the manual settings on my new camera. It isn’t DSLR, but it does have some manual options. I am still learning everything, so I have just been using the nifty food photography scene selection my Nikon came with for now. ;)

    I use to shoot in AV mode and then took this photography workshop like 3 weeks ago and now I only shoot in manual. I Love it, once I figured it out that is!You did a great job at these photos, and the shrimp recipes looks awesome! Thanks for holding this Spiked Recipe challenge… super fun!

    Oh my gosh those look so good! I think I might make those for dinner this weekend :) Yes, I can totally see the difference in the photos. I need to get a real camera, mine does not have lenses, or even white balance!

    Everything looks awesome! The tiki cake is hilarious!! LOVE IT!

    All y’alls comments about manual and AV remind me that I need to drag my dinosaur and use it instead of my phone and put my applied photograhy degree to good use…at least here anyway.

    LOVE the challenge and can’t wait to make these recipes to use the rest of the tequila. *snort*

    These look fabulous! I love shrimp, and the pineapple slaw sounds like the perfect addition! I don’t have a DSLR but I do have some manual options on my camera. I really need to figure out how to work the damn thing! : )

    Hi Julie! You take beautiful pictures, and yeah DSLR camera makes a huge difference. I still have a lot to learn and feel like not maximizing the camera. I LOVE your tequila lime shrimp and I actually should plan on making this tomorrow night. We’d totally enjoy this recipe especially it’s getting warmer after today! Thanks for sharing the recipe!

    I had fish tacos in Vegas about two years ago and I’m still dreaming of them, LOL. This recipe looks amazing, thanks so much for sharing~I’m totally going to try these soon! (Plus, nice and light for the warm wather).
