Have you ever had farro? I was a farro virgin until I made this delicious farro salad with sun dried tomatoes and artichokes. I even threw in some pine nuts for a good crunch. If you’ve never had farro before, you should totally try it. Like GO get some now!  It’s a healthy grain. It’s amazingly delicious – subtle and a little nutty. I think I prefer it over quinoa now and I think you’ll like it, too!

So let’s talk pillows. I know pillows have nothing to do with food…unless you’re using one to prop yourself up in bed so you can eat food in bed. I can’t say I’ve ever eaten food while in bed but I’m sure a ton of people do. So yeah. Pillows. I have the hardest time finding a pillow I like. I always buy cheap pillows that are flat and useless within 2 months. Then I repeat the entire process again. I REFUSE to buy expensive pillows out of fear of wasting my money on something I’m going to end up hating. But then something magical happened. Or so I thought. I found a pillow I loved at the hotel we stayed at while vacationing in Tampa last month. It wasn’t too hard to do. There were only 346373658 pillows on the bed in our room. The one I fell in love with was soft, slightly firm and perfect for a stomach sleeper like myself. I thought my pillow problems were solved but I forgot to look at the tag to find out the brand of pillow. I was thinking it was a down pillow so I bought a couple down pillows from Target. They were oh so comfortable and I had a couple of nights of great sleep while sleeping on said pillows. But then I remembered I was allergic to down after waking up with itchy skin, watery eyes and a stuffy nose. Blarg.

So now I’m back to sleeping on my flat, needs to be replaced like three weeks ago pillow and scouring the internet to find the next best pillow to try out. Any suggestions?

I think I’ll temporarily solve my pillow problems by face planting into a bowl of this farro salad.

Farro Salad with Sun Dried Tomatoes and Artichokes

Farro Salad with Sun Dried Tomatoes and Artichokes

Yield: 4-6 servings
Prep Time: 40 minutes
Total Time: 40 minutes

Farro Salad is packed full of tender sun dried tomatoes, artichokes and crunchy pine nuts. Tossed with an olive oil, red wine and Greek seasoning dressing for an outstanding pop of flavor!

Ingredients

  • 1 1/4 C farro
  • 2 1/2 C water
  • Pinch of kosher salt
  • 1/2 C pine nuts
  • 1/2 C julienned sun-dried tomatoes
  • 1 14oz can of quartered artichoke hearts, drained and rinsed
  • 1/4 C red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 shallot, finely chopped
  • 1/2 C fresh parsley, chopped
  • 1/2 tsp Greek seasoning

Instructions

  1. Cook the farro. Rinse the farro and pick out any stones or gritty pieces. Place in a large saucepan with the water and pinch of kosher salt. Bring to a boil and then reduce the heat to medium low. Cover and simmer for 30 minutes or until the farro is tender. Once the farro is done cooking, place in a large mixing bowl and allow to cool.
  2. Prepare the dressing. In a small mixing bowl, whisk together the olive oil, red wine vinegar and Greek seasoning.
  3. Once the farro is cooled, add the pine nuts, shallots, sun-dried tomatoes, artichokes and parsley to the bowl with it. Pour the dressing over top and mix well.
  4. Serve as a side dish or a main course.

  2. Sorry to hear those pillows didn’t work out for you! I’m not sure of pillow brands or anything, but I did just buy two really great ones from Bed, Bath and Beyond. Maybe you could check there? And I’ve never tried farro before, but now I definitely have to. This salad looks delicious, Julie! Love the sun dried tomatoes in here, too. Yum!

  3. Oh my gosh! I have such pillow issues! I like a thick but soft pillow. Sure they are great for a little while but then they are as flat as pancakes. I do find the more expensive ones last a little longer. I just buy it on sale. I like the Biltmore brand personally. Now farro, I have no issues with. Just love it and adore this salad.

  7. I used to be like you and always cheap out on pillows but then I got so sick of it. I ended up buying some slightly nicer ones (like I’m not spending $80, I think they were more like $39-ish) at Bed Bath and Beyond. So far I’m happy with them but the great thing about BB&B is you can return ANYTHING, any time. So you’ve got nothing to lose! Also I really need to try farro asap bc this salad looks amazing!

  11. No suggestion for the pillow. But I know what you mean. I don’t want to spend a mint on a pillow and then find I don’t like it. How can you really tell until you lay down and sleep with it a bit. I have an okay pillow right now, but I need to look for a special one also. I am also a faro virgin. It’s on my list to try very very soon. This salad was an excellent push in that direction.

    • I went to Bed Bath and Beyond over the weekend and found a comfy pillow that I actually like! Hooray for a better night’s sleep. Now maybe I won’t be as grumpy in the morning. ;) Oh you totally need to try farro, Carol! It’s so tasty. I just made another salad with it tonight and will be posting it soon!

I must try this salad!! and re: the pillow. . a few years ago, my husband wasn’t sleeping well so we got a sleep number bed. . he loves it. . anyway, we both spent like $100 each on pillows. . his might have been more. . anyway, the pillow and mattress are key for a good night’s sleep. . I got a contour pillow that wraps around my neck and I forgot what my husband got but his pillow is a little firmer.       Regarding the pillow, while my mom was in town, we went shopping at Bed Bath and Beyond. I finally found a pillow that I love and it was only about $30! Now hopefully it will last a while but I am still going to check out the sleep number pillow that you referenced. Thank you so much for the suggestion!

    • Thank you. Liz! I get that way with some foods, too – I forget to use them. I have a bag of red quinoa in my pantry that I’ve been meaning to make some dishes with and guess what – it’s still sitting unopened in my pantry!
