Pumpkin Spice Pudding Pie

  • 1 9 inch pie crust prepared according to package directions
  • 5.8 oz of pumpkin pie spice instant pudding (about 2¾ 3.4 oz packages)
  • 1½ C milk
  • 1 8oz tub of Cool Whip, divided
  • 2 C chopped pumpkin spice Oreo cookies, divided*
  • Caramel sauce for drizzling
  1. In a mixing bowl, whisk together the milk and pudding mix. Stir in half of the Cool Whip and 1 cup of the chopped cookies.
  2. Pour the mixture into the prepared pie crust. Cover and refrigerate for 30 minutes or until set.
  3. Spread the remaining Cool Whip on top of the pie and then sprinkle with the remaining cup of chopped cookies. Drizzle with caramel sauce.
*if you cannot find pumpkin spice Oreo cookies, you may use pumpkin spice biscotti (find it at Trader Joes) or any other pumpkin flavored cookie.

Prep time: 10 minutes prep, 30 minutes refrigerations to set the pie.
