Flourless Fudgy Brownies

These gluten free fudgy brownies are made with almond butter, cocoa powder and agave nectar.
  • ½ C cocoa powder
  • ½ tsp instant coffee powder
  • ¼ tsp baking soda
  • ⅛ tsp salt
  • ½ C almond butter
  • ¼ C coconut oil, melted
  • 2 eggs
  • 1tsp vanilla
  • ½ C agave nectar, or more if you prefer super sweet brownies
  1. Preheat your oven to 325.
  2. Line an 8x8 baking dish with parchment paper.
  3. Add all of the ingredients to a blender or large food processor and process until combined. I used my little cheapo blender and it worked just fine.
  4. Spoon the mixture into the baking dish and smooth out with rubber spatula.
  5. Bake for 20-25 minutes or until the center is set. A toothpick should come out clean.
  6. Remove from oven and place on a wire rack to cool before serving (10-15 minutes)
  7. Cut into squares. I cut mine into 12 squares. Or rectangles. Some were squares, some were rectangles.
