Tomato, Spinach & Artichoke Pizza

Serves: 6 servings
  • 1 12 inch pizza crust
  • ½ C pizza sauce
  • ¾ C spinach (I used frozen, thawed and squeezed dry)
  • 1 tomato, cored and chopped
  • ¾ C canned artichoke hearts, chopped
  • ¼ C red onion, chopped
  • 4-5 basil leaves, torn
  • ⅓ C feta cheese
  • ½ C mozzarella cheese
  • 1 tbsp olive oil
  • 1 tsp crushed red pepper, if desired
  1. Place the pizza crust on a pizza pan,
  2. Spread the sauce over the pizza crust and then sprinkle with ¼ C of the mozzarella cheese.
  3. Place the spinach, basil, tomato, onion and artichokes on the pizza. Drizzle with the olive oil and then sprinkle with the crushed red pepper, if desired. Sprinkle with feta cheese and the remaining mozzarella cheese.
  4. Bake at 425 for 8-10 minutes or until the mozzarella cheese is melted.
