Chocolate Chip Pancakes

Serves: 6-8 pancakes
  • 1 C all purpose flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 large egg
  • 1 C milk (can use coconut, almond or dairy milk)
  • 2 tbsp vegetable oil
  • ¼ tsp vanilla extract
  • ¼ C mini semi-sweet chocolate chips
  1. In a mixing bowl, combine the flour, sugar, salt and baking powder. Add the egg, milk, vanilla extract and vegetable oil and stir until combined but lumpy.
  2. Fold in the chocolate chips.
  3. Heat a skillet over medium heat. Spray with cooking spray. Pour ¼ cup of batter for each pancake onto the skillet. When the top starts to get bubbly, flip over and cook for an additional 1-2 minutes.
  4. Top with powdered sugar and serve with pure maple syrup, if desired.
