Oh how I love vegetable fried rice. It’s a great compliment to many Chinese dishes as it tasted great mixed with the sauces that come with the Chinese dishes. Spicy or savory, fried rice pairs will with either. The good thing about this homemade version, is that since it isn’t actually fried, it lacks the loads of oil that often comes with fried rice from a restaurant. Recently I made Red Chili Chicken and served it with this rice recipe. I found this recipe over at one of my favorite food blogs, Budget Bytes. I’ve made it a few times and sometimes I add bean sprouts. It tastes delicious with the addition of bean sprouts but I didn’t have any on hand so I left them out. This recipe is a great pantry cleaner recipe as you can pretty much add any vegetable to this recipe and it will turn out good. One day, I am going to try it with mushrooms. I hope you enjoy this recipe.
- 3 C cooked rice
- 2 tbsp peanut oil
- 2 carrots, peeled and sliced
- 3 cloves of garlic, minced
- 1/2 tsp ground ginger
- 1 C frozen green peas
- 1/2 C green onion, sliced
- 1 egg
- 1/2 large onion, chopped
- 1/4 C soy sauce
- 1 tsp sesame oil
