New England Clam Chowder

Recently I had the honor of being invited to guest host at Frugal Foodie Mama’s monthly Pinspiration in the Kitchen party. Of course, I accepted. Carrie is one of my first bloggy friends, she has a great blog and she guest hosted at the premiere of my guest-host addition of Marvelous Mondays!

What is Pinspiration in the Kitchen? Find. Pin. Bake. That pretty much sums it up. Pin recipes you want to try one day, make them and then share them on your blog. 

I decided to make New England Clam Chowder for this occasion. I have never made clam chowder but I’ve always wanted to. I found a few recipes and narrowed it down to this recipe. Of course, that’s my pin but you will find my version of the recipe below.
Ingredients
  • 4 small baking potatoes, peeled and diced
  • 8 oz of bacon, diced
  • 1 large onion. chopped
  • 2 cloves of garlic, minced
  • 2 10oz bottles of clam juice
  • 2 cans of chopped clams, juice reserved
  • 1/4 tsp of dried thyme
  • 1/4 tsp of white pepper
  • 1 cup of water
  • 1/2 cup diced celery
  • 1/4 cup of white wine
  • 2 cups of whipping cream
  • 1/3 cup of cornstarch
  • 1/4 cup of butter
  • Salt for taste (I didn’t add any; it depends on your taste preference)
Directions

1.  In a large pot, cook the bacon over medium-high heat.
2.  Add the thyme, white pepper, onion, garlic and celery. Cook until tender.
3.  Add the potatoes, water, clam juice, clam juice from the canned clams and bring to a boil. Reduce to a simmer, uncovered, for 20-30 minutes or until the potatoes are tender.
4.  Prepare the cream base:

  • Melt 1/4 cup of butter in a sauce pan
  • Whisk in the cornstarch
  • Whisk in the cream 
  • Bring to a boil and whisk often to ensure that the sauce doesn’t burn

5.  Add the cream base to the soup. Mix well.
6. Add salt to taste, if desire
