Blueberry Cake

I love blueberries and I have been wanting to make a cake, or some other dessert, with blueberries in it. Publix currently has pints of blueberries on sale so I picked up a couple pints and decided to make a blueberry cake. Now I did try to make this cake from scratch but since I am nowhere near being an expert at baking, the cakes didn’t turn out too well (the center sunk in so there wasn’t really any way to savage it) so I ended up opting for boxed cake mix. Yes, it’s not as good as from scratch and I would have rather made it from scratch but that will have to be at a later time. The cake still tastes wonderful and everything minus the actual cake mix is made from scratch.

Ingredients
For the cake

  • 1 box of Pillsbury Moist Supreme Golden Butter Cake 
  • 1 tsp vanilla extract
  • 1/3 cup of margarine, softened
  • 1 cup of water
  • 3 eggs

Prepare the cake according to the package directions. Add the vanilla extract. I opted for 2 nine inch baking pans. Be sure to make 2 layers as this cake has a blueberry filling.

For the filling
  • 2 cups of fresh blueberries
  • 4 tbsp of cornstarch
  • 1 cup of water
  • 1/2 cup sugar
In a sauce pan, add all ingredients and bring to a boil, stirring frequently. Reduce heat to medium and continue to stir, whisk and mash some of the blueberries. Once the blueberries are cooked, remove from heat. 

For the icing
  • 1 cup of butter, softened
  • 3 cups of confectioners sugar
  • 1 tbsp of whipping cream
  • 1 tsp of vanilla extract
  • Blueberry filling – use desired amount. Be sure to strain so you don’t get too many clumps of blueberries.

Once everything is prepared, trim the cake layers so they are straight and level. Add the desired amount of blueberry filling to the top of the bottom cake layer. Place the top cake layer on top of the bottom layer and blueberry filling. Ice the cake.  Enjoy!
